Bon appetit!

Light, delicate-tasting curd-oat muffins are a simple and delicious homemade pastry that will add pleasant variety to your everyday menu. Prepared with cottage cheese and ground oatmeal, the muffins are soft, spongy and juicy, and have a thin, slightly crispy crust reminiscent of oatmeal cookies - an incredibly appetizing combination that you want to return to again and again. Try it!

To make muffins with cottage cheese and oatmeal from cereal, you will need the ingredients indicated in the list.

Grind or mix cottage cheese and softened butter using a mixer.

Add sugar and vanilla and beat for 4-5 minutes until the sugar dissolves.

Continuing to beat the mixture at the minimum speed of the mixer, add the chicken eggs into the mixture one at a time. Beat the resulting mixture for another 1-2 minutes until smooth.

Grind instant oatmeal in a blender or coffee grinder.

Add the resulting oatmeal, baking powder and cinnamon to the curd mass and mix everything thoroughly. Add flour gradually, in small portions until you obtain a thick dough.

Leave the finished dough at room temperature for 15-20 minutes so that it sits and thickens a little more.

Grease silicone muffin tins with vegetable oil or melted butter.

Using a spoon dipped in cold water, distribute the dough into the pans and smooth out slightly.

Fill the pans about 3/4 full as the cupcakes will expand slightly as they bake.

Place the curd-oat muffins in an oven preheated to 170 degrees and bake for 40-45 minutes, or until cooked and golden brown. Check the readiness of the cupcakes with a wooden skewer.

Leave the cupcakes in the pans for 5-7 minutes. Then remove, cool, sprinkle with powdered sugar or decorate to your liking.

Ingredients

  • Oat flakes - 1 glass
  • Kefir - 1 glass
  • Chicken egg - 1 pc.
  • Granulated sugar
    (preferably reed) -
    70-100 gr.
  • Flour - 0.5 cups
  • Vegetable oil - 5 dining rooms
    spoons
  • Baking powder - 1 tsp.
  • Apples - 2 small
  • Vanillin or cinnamon
    taste -
    0.5-1 tsp.

Instructions

  1. Pour oatmeal into a separate bowl and pour in kefir. Mix well. It is best to use low-fat kefir - 1%.

Leave the flakes for 20-30 minutes until they soften and swell.

  2. In a separate bowl, beat the egg with granulated sugar.

  3. Add the swollen oatmeal to the egg-sugar mixture and mix.

  4. Peel the apples and chop finely.

  5. Mix flour with baking powder and vanilla or cinnamon.

  6. Add the apples and then the flour to the cereal and mix thoroughly. The dough should look like a thick porridge.

  7. Grease muffin tins with butter and place the dough in them. I use regular aluminum molds. The batter should take up a little more than half of the pan, as the cupcakes will rise a little during baking.

  9. Enjoy your tea!

I recently tried three easy oat muffin recipes: honey carrot muffins, apple banana muffins, and dried fruit and nut muffins.
All three types turned out very fragrant and the whole family liked them.
These cupcakes are a great option for “children’s” baking.

So, I’ll immediately say about the common points for all three recipes:
- I took instant oatmeal
- the dough in all cases should have the consistency of thick sour cream. If it’s too steep, add milk or kefir (depending on the recipe); if it’s too runny, add flour and/or oatmeal.
- I baked all three types at 180 degrees for about 25-30 minutes. Banana ones need a little longer.
- as always with cupcakes, check readiness with a toothpick. If the top browns prematurely, cover with foil and continue baking.
- it is recommended not to give nuts to children under 3 years old, but I allow my daughter a little, so I added some. If you don't want to, you can completely do without nuts.
- I took recipes from the Internet: , and , and changed them to suit myself.

CARROT AND HONEY OAT MAKES
With a delicate honey aroma, moist-juicy and beautiful inside...

For about 4-5 small cupcakes you needed:
1 small carrot, grated on a coarse grater
1.5 tbsp. liquid honey
30 grams of softened plums. oils
1 egg
1/4 cup flour
1/4 cup oatmeal
0.5 tsp baking powder

2. Sift the flour, mix with oatmeal and baking powder.
3. Pour the oatmeal-flour mixture into the butter mixture, add some of the nuts, and knead.
4. Distribute the dough among the molds, sprinkle the remaining nuts on top and bake.

APPLE BANANA OAT MAKES
Also moist, juicy and very tender fruit muffins. I didn’t keep them in the oven a little - it turned out that I didn’t have time, so in the photo they are not quite ready, but 5-7 minutes were not enough for them to be fully cooked.
But it was still clear that this was a thing I would definitely do again.

For about 6-8 muffins I needed:
ripe banana
medium apple
1 egg
1.5 tbsp. Sahara
2 tbsp. vegetable oil
100 grams of kefir
40 grams of flour
50 grams of oatmeal
a pinch of soda
2 tsp vanilla sugar

1. Mash the banana with a fork or puree it in a blender. Peel the apple and grate it on a coarse grater.
2. Beat kefir with soda, egg, butter, simple and vanilla sugar. Add banana and apple and mix again.
3. Mix flour and oatmeal. Pour the dry mixture into the liquid mixture and knead the dough.
4. Fill the molds with dough and put them in the oven.

OAT MAKES WITH DRIED FRUITS AND NUTS
Fragrant, dense muffins, with the sweet sourness of dried fruits. Ideal for tea.

For 4-5 pieces I needed:
1/3 cup oatmeal
1/4 cup flour
2 tbsp. Sahara
0.5 tsp loosening agent
pinch of cinnamon
1/4 cup milk
1 tbsp. vegetable oil
half an egg
finely chopped dried fruits and nuts (in my version - prunes and almonds, but dried apricots and raisins would also be nice)

1. Mix milk, butter, egg, sugar, cinnamon.
2. Mix flour with oatmeal and baking powder. Pour the dry mixture into the liquid mixture, mix, add dried fruits and nuts, mix again.
3. Fill the molds with dough and put them in the oven.

Fragrant tea parties for you and your kids:)
